Time: ~30 minutes
Serves: 2–3
Ingredients:
• 1 can (15 oz) chickpeas, drained and rinsed
• 2 cups broccoli florets
• 1 red bell pepper, chopped
• 1 medium zucchini, sliced
• 1 small red onion, sliced
• 3 tablespoons olive oil
• 1 teaspoon salt
• ½ teaspoon black pepper
• 1 teaspoon garlic powder
• ½ teaspoon smoked paprika (optional)
• Optional finish: grated parmesan, feta, or a squeeze of lemon
Directions:
Preheat oven to 425°F (220°C).
Pat chickpeas dry with a paper towel (this helps them roast instead of soften).
Add chickpeas and vegetables to a large sheet pan.
Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, and paprika.
Toss everything until lightly coated.
Roast for 25–30 minutes, stirring once halfway, until tender and lightly browned.
Taste and adjust with a pinch of salt or lemon if needed.
